The weather has been gorgeous and hot! Such a great way to start the year off. Busy as ever Living Beauty girls are getting leaner and feeling more energetic each week. Gemma and I have had quite a few new girls starting and their progress is fantastic. I really am priviledged to be able to help girls understand how to train and eat to get the body of their dreams. No starvation here! Just nutrient dense meal plans to give vitality, health and the best muscle structure. A better version of you! Oh and dont forget we are also kicking butt at the gym with a good weights plan to tone the body and give the muscular look of a Sports Model, not a bodybuilder! Love lifting weights!
As promised here is a great Summer Salad Recipe! Great for an Australia Day BBQ!
Living Beauty Raw Summer Salad
I use all organic or low spray veggies and a few that are extra yummy from my garden.
2 carrots, 2 large handfuls fresh spinach, 1 large or 2 small cucumber. Fresh herbs basil, parsley, mint to your own taste.
1 red capsicum, 1 cup olive oil, 1 tsp fresh chilli, 2-4tbsp fresh lime/lemon juice, 2 tbsp ACV (Apple cider vinegar), 3 tbsp wheat free tamari sauce, 1.5 tbsp agave, 2 cm fresh ginger, 1 tsp curry powder, 1 tbsp fresh coriander, ½ tsp Himalayan salt.
I pulsed the raw vegies only twice in thermomix to chop them coarsely. Then arranged them on a white salad platter for high colour and a fresh look. Choose a good setting on your food processor that gives a fine consistency or chop by hand.
In thermomix or food processor, start with fresh herbs and ginger and chop finely, then add all other ingredients and mix well.
Add dressing just prior to serving this crunchy, nutrient dense salad!
I had half the dressing left over and it keeps for a few days in an airtight glass jar in the fridge.
