Green Goddess Soup Recipe!

What a great long weekend it has been! I have done some great training sessions with friends and really varied my training from indoors to climbing the huge grandstands at Memorial Drive in Adelaide. Stair workouts are fantastic for toning the legs and make a different when you want to tighten your hips, thighs and butt!

I wanted to share a soup recipe with you, as soup is so warming for winter. Right now we are experiencing freezing cold weather and I believe in eating for the seasons. Not only is seasonal produce full of nutrients but you will feel better with warm foods in winter.

Green Goddess Soup
Serves 4
One clove of garlic peeled and crushed
Two radishes (or one daikon) peeled and chopped
One medium sweet potato peeled and chopped
600mls of vegetable stock (from 2 vegetable stock cubes)
2 large zucchini trimmed and cut into 1cm pieces
5 kale leaves, rinsed and drained
Handful of spinach leaves.
Saute the garlic in a sauce pan with a little water for 4 minutes. Add the daikon or raddish and sweet potato and saute for a further three minutes.
Add the rest of the stock and simmer for 10 minutes.
Stir in the zucchini and Kale and simmer for a further 5 minutes.
Add the spinach in at the end and simmer for a further minute.
Pour the soup mixture into the blender or food processor and blend till smooth.
Return to the saucepan and add some freshly chopped parsley to garnish.
For one serve I recommend adding grilled chicken or turkey and chopping this finely and stir into the soup. For addition flavour you can add Sesame and Wakame (seaweed) and a handful of sunflower seeds.
