Carb Phobic?

You can eat carbohydrates and stay lean, it is all about nutrient timing! Pre and post workout are a great time to consume your carbohydrates. Today, as promised, I have a great recipe for you. These delicious bars contain protein and carbohydrates.

Protein bars are a convenient way to eat on the run, however most pre-packagd versions are loaded with additives and are way too high in digestive triggers that irritate my stomach! Therefore I make my own! By poular demand here is my recipe.

Please go back to my facebook page after you have read this and like the post and let me know if you made the recipe. I appreciate your likes and feedback as it takes time to write my blog and if I know it helps you I will continue to write regularly. Thank you 🙂

Carrot Cake Protein Bars

Ingredients:

  • ½ cup coconut flour
  • ½ cup rice flour
  • 4 scoops vanilla protein powder
  • 2 tsp cinnamon
  • 2 tsp all spice
  • 1 tsp gluten free baking powder
  • 6 egg whites (from 700gram eggs)
  • 1-2 tbsp of agave syrup OR 1 tbsp stevia (sweetener is based on preference)
  • 200grams of grated organic carrots
  • 150ml water (may add more water if consistency is too thick.)

Method:

Line a 20cm x 15cm (approx size) baking tray with coconut oil and then baking paper cut to size.

Preheat oven to 180 degrees in a fan forced oven.

Mix all dry ingredients together in a bowl. Mix egg whites, carrots and water in a bowl.

Add wet ingredients to dry ingredients and mix together. Alternatively add all ingredients to a food processor and mix on a low speed until smooth. If mixture is too thick add more water.

Transfer the mixture into your pre-prepared baking dish and bake for 20 – 25 minutes, checking after 20 minutes by poking a skewer in the centre to see if it comes out clean, if not place back in for another 5-8 minutes until cooked through.

Makes approx 15 squares.
